The Craft

Flame and prime cigars

We source exceptional prime cuts from local New Mexico ranches and sear them to perfection on skewers. The high heat seals in rich, rustic flavors, creating a perfect crust that honors the raw spirit of the high desert.

Every plate is served with a cigar option directly to the long outdoor tables, timed to match the unhurried rhythm of the night.

The Selection

A decade of aging, released in unhurried smoke.

We pair each course with rare, hand-rolled cigars featuring wrappers aged for ten years. These selections deliver deep, complex notes of leather and earth, designed to complement the wood-fired culinary craft.
